Garbanzo With Pig's Feet

INGREDIENTS (should serve 4)

* 3lb potatoes

* 1lb dried garbanzo beans

* 6oz can of stewed tomatoes

* 4 teaspoons of olive oil

* 4 cloves of garlic

* 3 pigs’ feet (quartered)

* 2 each (medium) of chorizos, bell peppers, onions

* 2 teaspoons of vinegar

* 1 1/2 teaspoons each of salt, oregano, cumin, black pepper

* 1 piece of salted pork (smallish)

* 1 teaspoon of saffron

* 1 bay leaf

* 3/4 of a cup each of Spanish olives and raisins

* 1/2Ib ham

* 12 to 14 cups water

PREPARATION

Cuban’s love eating pig’s feet and have several different recipes for cooking them. This is one of the more popular ways. Start by boiling the pig’s feet together with the garbanzos in boiling water. You may want to leave this overnight. Add potatoes, beans, garlic, vegetables and spices and cook for a further half-an-hour. Serve as a broth/soup with mashed potato.
