Cuban Style Sea Bass

INGREDIENTS (serving 4)

* 4oz fillet sea bass

* 4 cups of chopped tomatoes

* 2 tablespoons each of olive oil, butter and minced garlic

* 11/2 cups each of onions (sliced) and cooking wine (white)

* 2/3 of a cup of stuffed green olives

* 1/4 of a cup each of choppes fresh cilantro and drained capers

* 1/8 of a teaspoon of red pepper flakes

PREPARATION

Sea bass just has to be one of the most sublime fishes available to eat and makes a perfect central ingredient in a recipe. To prepare Cuban style sea bass you need heat up some oil in a large skillet and sauté your onions until they are soft. Then stir in your garlic and leave to sauté for another minute or so. Add your tomatoes and cook till they are soft. Add some cooking wine, capers, olives and red pepper flakes. Heat to simmer. Put your sea bass into the sauce you have prepared and cover the skillet so that it can simmer at medium heat for ten to fifteen minutes. Once the fish starts to look like it will flake easily, put the fish on the serving plate and serve. Very simple – very tasty!
