Platanos en Tentacion

Posted Saturday, September 18, 2004

INGREDIENTS (should serve 6)

* 3 tablespoons of butter

* 3 tablespoons of dry white wine

* 2 short cinnamon sticks

* 1/3 cup each of white sugar and brown sugar

* 1/8 tablespoon of powered cinnamon

* 3 ripe plantains (to get the maximum taste from this appetizer: try, if possible, to get the ripest plantains available – to the extent that most people would be just about ready to throw them out)

PREPARATION

I just love the name of this appetizer and would serve this at any Cuban night just to see if my guests could pronounce it! Anyhow, it is also fairly easy to make, so it makes for a good quick dish if you need to scramble something together at short notice. To prepare palatanos, you need to preheat your oven to 375 degrees Fahrenheit. The butter a glass pyrex dish into which you need place the previously peeled plantains. Then sprinkle half of your allotted sugar over the top of the plantains and add dry wine and add little pieces of cinnamon sticks into the plantains. Once you’ve done this, sprinkle the remainder of the sugar over the top with the powered cinnamon. Then cut-up you butter and stick these over the plantains. Having prepared the appetizer, stick this in the oven and bake for approximately one hour.
