Cold Fruit Salad

INGREDIENTS

* 20 – 25 Marshmallows

* 20 – 25 drops of red coloring

* 1 can of fruit cocktail

* 1 cup of mayonnaise

* 1 cup whipping cream

* 1 cream cheese

* ½ cup morello cherries

 

PREPARATION

There is something magical about visiting a tropical paradise island and eating fresh fruit. With such an abundance of fruit, a cold fresh fruit salad will put that island feeling into your special Cuban dinner evening.

To prepare for this simple Cuban cold fruit salad, line two ice trays with wax paper and then drain the fruit well. You then need to cut marshmallows into pieces of the fruit with wet scissors. At the same time, beat the cream cheese and add some mayonnaise. Add whipped cream and the remainder of the ingredients and then add the drained fruit.. Mix at leisure before pouring the mixture into the ice tray and allowing the mixture to set in the freezer. Once this has been completed, cut into the squares and serve them over a bed of lettuce.
