Posted Saturday, September 18, 2004

INGREDIENTS (should serve 6)

* 1 loaf of bread – Cuban-style if possible

* 4 eggs

* 2 tablespoons dry cooking wine

* 2 cups of frying oil

* 1 can of evaporated milk

* 1 tablespoon each of vanilla extract and ground cinnamon

* 1 cup of sugar

PREPARATION

Another of Cuba’s traditional desserts showing its closeness to Spanish/Latin American cuisine. To prepare Torrejas you’ll need to mix beat 4 egg yolks and mix these with some sugar, milk, cooking wine, vanilla and cinnamon. Once you have completed this, cut some bread up into thin slices and soak the bread in the mixture. Just before you are ready to serve, fry the mixture in hot oil until you see the Torrejas turn a light golden color. Add some almibar (or any other type of syrup that might take your fancy) and serve.
