Cuban Recipes

    APPETIZERS [1]: Black Beans & Rice with Mango

    1/8 cup crumbled chorizo

    ¼ cup chopped red pepper

    ¼ cup chopped onion

    1.5 minced garlic cloves

    ¼ fresh mango – chopped

    8oz black beans (can) – pre-rinsed and drained

    ½ teaspoon crushed oregano

    1/8 teaspoon crushed red pepper

    1 cup of white rice (cooked)

     

    To cook

    1. start with the chopped red pepper, onion and chorizo in a large skillet for 3 minutes [once you see the chorizo start to brown – stop]

    2. Add the beans, water, oregano, and crushed red pepper. Add a little salt. Bring all to a boil

    3. Let the contents simmer for 8 minutes;

    Serve cooked contents over rice and then adding mango.

    [2]: Avocado Mouse

    2 Avocados

    4 oz sour cream

    1 small grated onion

    1 tablespoon lime juice

    1 tablespoon Worcestershire Sauce

    4 oz mayonnaise

    ½ cup of water

    2 unflavored gelatin

    salt for flavor

    1. apart from the water and gelatin, add all ingredients in blender.

    2. Sprinkle gelatin with cold water – Add hot water till dissolved.

    3. Blend avocado mixture.

    4. Pour in mold and keep in fridge till set.SALAD [3]: Cuban Salad

    ½ head of lettuce

    ½ avocado

    ½ red onion

    1 teaspoon olive oil

    lime juice

    add salt to flavor

    1. arrange lettuce

    2. top with small slice of avocado and onion

    3. add olive oil

    4. sprinkle with water

    5. add lemon

    [4]: Chayote Salad

    3 chayotes/meletons

    ¼ teaspoon mustard

    1/8 teaspoon salt

    1/8 teaspoon black pepper

    1/8 cup oil

    1. boil chayotes

    2. mix rest of ingredients – pour over chayote

    3. place in fridge

    4. serve over lettuceMain Course [5] Caserola de Camnarones Enchilados

    1 cup cooked and peeled shrimp

    1 cup canned tomatoes – crushed

    ½ chopped green pepper

    ½ olive grove

    ½ green pepper

    1 teaspoon butter

    salt to taste

    1 cup cooked rice

     

    1. Saute onion, garlic and green pepper in butter

    2. Add shrimp, salt and pepper

    3. Stir in tomatoes

    4. Add cooked rice

    5. Place in casserole dish and bake for 375o to 30 minutes

    [6]: Costillitas

    3 lean baby back pork ribs

    4 cloves garlic

    2 lemon’s juice

    1/8 teaspoon ground oregano

    ½ cup sour orange juice

    3 teaspoon salt

    1 teaspoon olive oil

     

    1. cut up ribs into smaller pieces

    2. smash garlic in a mortar

    4. mix lime juice /OJ

    5. add salt

    6. marinate ribs for 2-3 hours in large (non-metal) container.

    7. Place in fridge for 3 hours;

    8. Slowly cook for 30 minutes;

    9. Turn rib occasionally

    10. Charcoal heat in order to brown

    [7]: Boliche (pot roast)

    1 ibs roast

    3 large crushed garlic cloves;

    ½ tablespoon salt

    ¼ black pepper

    ¼ ground ham

    2 tablespoon vegetable oil

    1 sliced onion

    1 sliced tomato

    5 whole black pepper

    1 bay leaf

    ½ cup dry white cooking wine

    a cup water

     

    1. Mix garlic with salt and ground pepper.

    2. Pierce using sharp knife

    3. Use half of garlic mixture to fill holes

    4. Cut “X’ through center of roast – length wise

    5. Pack cavity with ground ham

    6. Spread leftover garlic mixture on surface of roast’

    7. Cook in oven for 2 hours

    8. Serve when ready

    DESSERT [8] Cuban Banana Custard Tart

    1 soften sticky butter

    2 tablespoon sugar

    1 lightly beaten egg

    ¼ teaspoon vanilla

    1.5 cups of flour

    ½ cup of finely chopped cashews

     

    1. beat butter and sugar in electric mixer

    2. add egg and vanilla and continue beating

    3. mix flour and cashews

    4. roll out

    5. put in fridge [30 minutes]

    6. preheat oven at 350 degrees

    7. bake for 15 minutes

    8. let it stand 5 minutes to cool then serve

     

    [9] Pan Suave (Cuban Sweet Rolls)

    1 envelope active dry yeast

    ½ cup sugar

    ½ cup warm water

    1/3 cup vegetable oil

    1 large beaten egg

    1 tablespoon salt

    2 cups of bread

    1 tablespoon sesame seeds

    1 tablespoon melted butter

     

    1. Dissolve yeast and sugar in warm water in large mixing bowl;

    2. When foams, dissolve in remainder

    3. Beat remaining egg

    4. Stir 2 tablespoon salt and flour’

    5. Turn dough onto lightly flowered surface

    6. Knead till smooth

    7. Transfer to bowl

    8. Cover rise in warm, draft-free spot

    9. Transfer rolls to lightly grease baking sheet

    10. Pre-heat oven

    11. Bake till golden brown [20-30 minutes]

    DRINKS

    [10] Champola de Guanabana

    3 cups Guanabana pulp

    4 cups of milk

    1 cup of sugar

    ice cubes

    ground nut meg for garnish

     

    Combine all except nutmeg in a pitcher. Keep cool. Serve with nutmeg sprinkling.
