Salted Codfish

 

INGREDIENTS (should serve 4 – 6)

* 2Ib of salted codfish

* 2 cups of milk

* 2 garlic cloves

* 1 large onion

* 1 tablespoon of minced fresh chives

* 1 teaspoon of paprika

* 1 cup of flour

* 1/2 a teaspoon of freshly ground black pepper

* 1/4 of a cup each of butter, olive oil and cooking wine (white)

* Chopped chives and parsley sprigs

* Olive oil for greasing

PREPARATION

As you will be able to see, from the number of codfish related Cuban seafood recipes, codfish is a popular fish of choice in Cuban. To prepare the salted codfish special, you need to preheat your oven at 350 degrees Fahrenheit. At the same time, get a saucepan and heat some olive oil at medium heat – to which you need to add your garlic. Sauté this until it turns a soft color (around 4 minutes or so). Then add some cooking wine and cover the saucepan. Reduce the heat to medium-low, as you want this to simmer for around five minutes. After this, stir in some chives and butter. When this is melted, mix in some milk and let it stand to one side. Now, take hold of your codfish, de-bone it, cut it into fillet serving sizes and grease a baking dish – preferably with olive oil. In a separate bowl, mix together some flour, pepper and paprika. Sink the codfish into the flour and then lay it in the baking dish. Bake for around half and hour. Serve to your waiting guests and have fun!
