Party Chicken Salad

 

INGREDIENTS (serves more than 8)

* As much lettuce as you think you’ll need for garnish

* 2Ibs of potatoes

* 3 hard boiled eggs (1 sliced, for use as garnish)

* 2 chickens (each 2Ibs)

* 1 (chopped) apple

* 1 ½ cup baby green peas (from a can – ½ cup to be used as garnish)

* 1 can of asparagus 1 can of sweet red peppers (as garnish, so cut peppers into strips)

* 25 seedless green olives (garnish)

 

PREPARATION

Its’ a Cuban party so let’s have some Cuban party chicken salad! Pre-preparation of this dish involves having to roast the chicken at 375 Fahrenheit for 1 to 2 hours as you’ll need to let this cool before making the dish. You also need to de-bone the chicken and cut the chicken into small piece. When this is ready, dice and cook some potatoes in salted water. Mix the chicken and potatoes with the other ingredients and then keep this in the fridge. When it’s time to serve this dish, serve cold over a bed of lettuce and garnish using asparagus, sliced eggs, olives, sweet pimentos, peas and anything else you might want to add.
