INGREDIENTS (should serve 4)
 

  • 2 chopped green peppers
  • 21 choppes tomatoes
  • 10 garlic cloves
  • 4 tablespoons of olive oil
  • 2 each of chopped green peppers and onions
  • 1 bay leaf
  • 3/4 of a cup of sherry
  • cumin, oregano, sale and pepper for taste

PREPARATION

If you are keen to learn how to cook Cuban food, you will, eventually, have to learn how to cook Sofritos as they form the base for so many popular Cuban recipes. Indeed, they’re not that complicated to prepare. All you need do is sauté some tomatoes, onions, bay leaves, garlic, peppers, oregano and cumin in some oil very slowly until all of your vegetables are limp.
